Chicken & Barley Salad Recipe

Ingredients

Barley; uncooked quick- cooking barley

Chicken; diced cooked

Celery; diced

Tomatoes; chopped

Red onion; chopped

Lemon juice; fresh

Dijon mustard;

Lettuce; leaves

Directions

  1. Bring water to a vigorous boil in a medium saucepan over high heat.
  2. Stir in barley; return to a boil.
  3. Reduce heat, cover, and simmer 8-10 minutes or until barley is tender, stirring occasionally.
  4. Drain if necessary; cool.
  5. Toss barley with remaining ingredients excpt lettuce.
  6. Serve on lettuce leaves.
