Blt Potato Salad Recipe

Ingredients

Prepared white horseradish

SALAD:

Potatoes, peeled, cooked and cut into 1/2 inch pieces (6 cups)

Sliced scallions
½

Finely chopped dill pickles

Med-sized tomatoes cut into 1 1/2 inch chunks

medium
Sized leaves Boston lettuce, stacked and cut into 1-inch-wide
Strips

Strips bacon, cooked crisp, drained and crumbled.

Directions

  1. DRESSING: Whisk dressing ingredients in a large bowl.
  2. Add potatoes, scallions and pickles.
  3. Toss gently to mix and coat.
  4. Cover and chill at least 1 hour for flavors to blend or up to 3 days.
  5. Just before serving, gently stir in tomatoes and lettuce.
