Feta or goat cheese

Walnuts

Thinly sliced scallions

Basic vinaigrette dressing
Directions
- Cube the beets and the apples and mix together in a bowl wiht the cheese, the walnuts and the scallions.
- Drizzle dressing over and stir to coat.
- Serve on a bed of butterhead lettuce.
